Fennel is an aromatic and delicious spice with many uses in cooking, medicine and distillery. It is a key ingredient in Indian cuisine as well as Middle Eastern cuisine. In Italy it adds flavor to sausages and meatballs. In the distillery it is used to aromatize grape distillates, i.e. during the production of tsipouro, raki and other drinks.
