Ceylon cinnamon is considered the best quality cinnamon and is distinguished by its light brown color, delicate pleasant aroma and intense sweet taste. It has digestive properties and relieves colds and rheumatism. Its essential oil is strong antimicrobial and helps with toothache, since it kills the nerve, its vapors are inhaled in upper respiratory infections. Ceylon cinnamon differs from Indonesian cinnamon (Cassia cinnamom). Ceylon cinnamon is lighter in color, has thinner layers folded inside, and contains much lower percentages of coumarin, so it has a milder flavor.
